When you're ready to try again, I'd call or do a chat with the King Arthur Flour Baker's Hotline. I've found them very helpful.

Their honey-oat pain de mie recipe for a 9" pan calls for only 3 cups of flour, and their instructions for baking it in the larger (standard 13" x 4") pain de mie pan are to "Increase all the ingredients except the yeast by 50%; leave the yeast as is. Bake the bread for about 35 minutes with the lid on, and 8 to 10 minutes with the lid removed."

So - 4-1/2 cups of flour, and you're probably using about 6 or 7 in your own favorite recipe if it usually makes 2 loaf pans. I wish you the best of luck figuring it out!
