Notes on a Droid

I have tried a lot of stuff, such as Evernote and Simplenote, but ended up using an app called Epistle. This uses text files synched to a directory on a DropBox account. This let's me share/sync my notes files using Dropbox with other machines, and other OS's, using whatever my favorite text editor is on those machines (Notepad++ on Windows, Kate under Linux).

Plus, you can use http://www.textdropapp.com/ to edit them from any web browser.
