If you haven't tried it, I've had very good luck with SAF instant yeast (from Amazon). I get the one pound packets and freeze it in baby food jars (anything air tight would probably work). I use it directly from the current baby food jar in the freezer. The freezing keeps it fresh, and it doesn't need proofing, although I do that as a matter of habit. It seems to work fine either way. I like it a lot better than packets from the supermarket.
