The biggest difference (besides the obvious one: when we were writing Fledgling and Saltation, we were also writing another book simultaneously, which is, for us, too many books in the air at once) is that I'm revising Mouse and Dragon as I go along. It will still need -- and I hope I'll have time for -- one overall revision at the end.
Fledgling and Saltation on the other hand, were written full steam ahead, which meant that the revision stage (the part you don't see) was much more intense and time-consuming.
