I'll do what I can to safely avoid any animal (we've got our share of deer in west Texas), and I've pulled over to try to get to strays before, but I also try very hard not to gawk at stuff going on outside my driving scope. My reflexes are only fair, and I need all the advance notice I can get.
I don't know what your stretch of the Interstate is like, but having driven on I95 between Baltimore and D.C. for four years, with its absolutely HATEFUL drivers, I'd be very hesitant about trying to collect a stray there.
