Um -- our local chocolate addict came to a meeting not too long ago, and for a change, gave away chunks of the bar they had purchased as a meeting snack. It was one of the 90+ percent chocolates, and there was universal agreement that it was too bitter. Turned out that was why the addict gave it away -- he had tried a bite on the way from the store to the meeting and decided it was too bitter for him. Personally, it reminded me of trying cooking chocolate. And I prefer dark chocolates.

It depends on the source. The Lindt 99% dark is bitter but goes well with barbecue-flavored chips. I've had 99% darks from other makers that weren't bitter at all or had the bitterness well balanced with fruity.

I haven't much cared for the Lindt chocolate I've sampled. Mind you, it's better than no chocolate, but I really prefer Green & Black -- the dark chocolate and ginger is to die for.

If you can get it, Whole Foods sells a dark chocolate and toffee confection that is incredible - Laceys desserts on us almond & dark chocolate, described as "...rich smooth chocolate melted between two feather-light toffee wafers." I just tried it, it's actually lives up to the adjectives/sales pitch on the package. www.dessertsonus.com.

Steve has proposed a trip to Portland to visit Whole Foods sometime realsoonnow (like, when he's finished the final draft of Saltation and I'm done with Mouse and Dragon. Will try to remember to look for this, when we finally arrive.
