It depends on the source. The Lindt 99% dark is bitter but goes well with barbecue-flavored chips. I've had 99% darks from other makers that weren't bitter at all or had the bitterness well balanced with fruity.

It sounds as if I need to try more varieties. Now that's a research project with built-in motivation :-)
