Who has a good great recipe for oatmeal cookies they'd like to share? I had my grandmother's, but just now when I went looking for it -- it's gone. Argh!
1/2 cup butter, softened 1/2 cup light brown sugar 1/2 cup granulated sugar 1 egg 3/4 cup flour (sifted) 1/4 tsp salt 1/4 tsp baking powder 1/8 tsp freshly grated nutmeg 1.5 cups rolled oats 3/4 cup chocolate chips or raisins (opt)
Preheat oven to 350 degrees. Beat butter until creamy. Add sugars and beat until fluffy. Beat in egg.
Mix flour, salt, baking powder, and nutmeg together, then stir them into the butter-sugar mixture with a wooden spoon. Stir in oats and optional chocolate chips.
Form dough into 1.5 inch balls. Bake until edges turn golden brown, about 14 minutes.
Variations: Ginger Oatmeal Cookies: Add 3/4 tsp ground ginger. Orange Oatmeal Cookies: Add 2 T minced orange zest. Huge: Make 2 inch balls and bake them 22-25 minutes.
I just leave the chocolate chips out of this recipe:
Cowboy Cookies 1/2 cup butter 1/2 cup sugar 1/2 cup brown sugar 1/4 tsp baking powder 1/2 tsp baking soda 1/2 tsp vanilla 1 cup flour pinch salt 1 cup rolled oats 6 ounce package chocolate chips
Cream butter & all sugar. Add vanilla and egg. Beat and add flour sifted with salt, baking power & soda. Add oats & chocolate chips. Drop by tablespoon onto ungreased cookie sheet (I use aluminum foil myself or spray). Bake at 375°F for 8 minutes (I have added to this 10-12, however I tend to bake by smell)
You can also vary this recipe by adding 1/2 tsp cinnamon, 1 tsp lemon peel, 1/4 tsp orange extract, 3/8 tsp vanilla, 1/4 tsp nutmeg, 3/8 tsp clove & 1/4 tsp mace... why yes, I have been known to experiment in the kitchen! However did you guess? ::grin::
My grandmother's oatmeal cookies are to die for. Only difference between hers and any other recipe is that an hour before you make them, soak the raisins in the egg and vanilla for that hour. Then mix away! Jenny from CO PS When you get ready to make zucchini bread this summer (I assume you also are gifted with baby-sized zuccs when people come back from vacation)let me know. We have a dynamite recipe for that too. Mums the word but 3 tablespoons of ginger largely figure in it!
I love these cookies. (http://www.foodnetwork.com/recipes/ina-garten/raisin-pecan-oatmeal-cookies-recipe/index.html) The oats needed are the classic Mother's Oats. Not the instant and not the Irish needs-to-cook-for-half-an-hour oats, but the ones in-between.
I will add that toasting the nuts ahead of time does make a world of difference. And pecans taste better, at least to me, than do walnuts.
2 and 1/2 sticks butter 1/2 cup regular sugar 3/4 cup brown sugar 2 eggs 1 tsp vanilla 1 and 1/2 cups flour 1 tsp baking soda 1 tsp salt 1 tsp cinnamon 1/4 tsp nutmeg 3 cups rolled oats, uncooked
Preheat oven to 350 F. Mix together all the dry ingredients except the oatmeal. Set aside. Cream the margarine and sugar. Add eggs and vanilla. Mix. Add dry ingredients (except oatmeal). Mix. Stir in the 3 cups oatmeal. Drop by teaspoonfuls onto an ungreased cookie sheet; bake 9-11 minutes, or until the edges just start to brown and the tops of the cookies "set".
Cover with boiling water: 1 cup dried cherries chopped Let stand ten minutes or so and drain.
Preheat oven to 375 degrees.
Combine in a large mixing bowl: 2 1/4 cups flour 1 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon ground cloves [note -- I usually double the spices, but I like spicy cookies]
Beat in until well blended: 1 cup shortening 1 1/2 cup firmly packed brown sugar 1 egg 2 tablespoons milk [note: I use half butter for flavor, but half shortening for volume]
Stir in drained cherries and 2 cups uncooked quick oats
Cut in half each of 1 (10 oz) jar of maraschino cherries.
Form dough into 1 1/2 inch balls on foil lined cookie sheet. Make a thumbprint hollow in each ball and dot with cherry half.
I generally take the tollhouse cookie recipe, substitute oats for half the flour and bake in a brownie pan to make oatmeal/choc chip pan cookies.
I use the regular Quaker oats, not the long-cooking variety. Lauretta@ConstellationBooks PS I see by your time stamps I'm a day late...I hope your cookies were fabulous...you all have made me hungry.
This recipe has the great virtue of being subtitled "aggression cookies" -- you dump everything in a bowl and use your hands to mush, smash, and kill the heck out of it. The more you beat it up, the better they taste (and the better you feel).
Also doesn't use egg, so is safe to nibble on raw, if you're into that kind of thing.
I feed them to Ski Patrol many nights, hence the title.
Patrol Oatmeal Raisin:
1 cup oats ½ cup brown sugar ½ cup flour 1 stick butter ½ tsp baking powder ½ cup raisins
Mix, beat, smash all together. Roll into walnut sized balls. (WHOLE walnuts -- not shelled.) Bake at 375 for ~12-14 min.
I have come to accept allrecipes.com as my resource of first resort for finding recipes. They have a multitude of recipes, and if you register (which is free), you can save recipes into your own recipe box, which you can organize with folders and sub-folders to your heart's content.
I have also enjoyed bigoven.com, and I subscribe to several recipe blogs, but I would always go to allrecipes.com first.
That's where I find our oatmeal cookie recipe, and they are yummy good. I don't have a box on hand to compare ingredients with others listed, but you can't loose this recipe. =)
